(Aubrey Stout) La Ferme du Plateau "Pre en Bulles" Rosé Pet Nat - A festive pétillant naturel from up and coming Loire producer Adrien Baloche. He lives with his family in the central part of the Loire Valley, not far from the city of Tours. They own six hectares of vines, which they farm biodynamically, along with vegetables. They also keep a sizeable herd of goats. Adrien's soils are clay, limestone, and silex, planted to Chenin Blanc, Gamay, and Grolleau. He adds very little sulfur, if any, to his wines, and they are bright, pure expressions of Loire fruit, showcasing what this region does so well -- drinkable, refreshing wines with bright fruit, minerality, and acidity. This Grolleau rosé is all fresh spring strawberries and tart cherries, with an underlying mineral streak. Drink it with a big spring salad with greens and strawberries, toasted nuts, and fried goat cheese.
Aubry Ivoire et Ebene Champagne - A special cuvee from one of our favorite Skurnik producers, Aubry! Located in the Montagne de Reims, this is a premier cru wine blended from 50% Chardonnay, 25% Pinot Noir, and 25% Pinot Meunier. It's aged four years before release. It's a firecracker of acidity, with taut, energetic, lean fruit and a salty, citrusy finish. Drink it with tuna confit salad -- lots of fresh chopped cucumbers, avocado, olives, and crunchy pickles, with a lemony vinaigrette.
